Baked Falafel Plate with Tzatziki and Hummus

• vegan falafel • roasted red pepper hummus • tzatziki • cherry tomatoes • spring mix • . Falafel: 1 can drained chickpeas, 1/4 cup parsley, 5 cloves garlic, 1/2 onion, 4 Tbsp brown rice flour, salt, cumin, cayenne. Blend, form into small patties and sear on both sides in olive oil. (I’m going to try baking next time and see if they hold up) . Tzatziki: plain Greek yogurt, grated cucumber, dill, chives, lemon juice. . Hummus: 1 can drained chickpeas, 1 jarred roasted red pepper (or homemade), 2 cloves garlic, tahini, salt. . CONTAINS: Milk.
