Baked Lemon Salmon with Wilted Spinach and Mushroom Risotto

• salmon • brown rice w/ mushrooms • sautéed spinach w/ charred garlic • . It’s so easy to create a balanced plate: 1/2 non-starchy veggies, 1/4 lean protein, 1/4 starch or grain. I pick a veggie for my dinners while I’m at the grocery store - whatever sounds good to me at the time. I always have quinoa and brown rice in the pantry for a quick grain choice. And salmon because it’s, well, salmon. Such a nutrient-dense quality protein. . CONTAINS: Fish.
